Usually in a traditional context yellow mung beans and basmati rice are used, as these are easily digested.<\/p>\n<p>Another component of of kitchari is that fact that you can create custom spice blends according to your Ayurvedic dosha or \u2018body constitution\u2019 to be used as a base for the dish.<\/p>\n<p>Kitchari is known to heal the gut and sooth any malfunction within the intestinal walls, which is why it is such a revered food from an Ayurvedic context.<\/p>\n<p><strong>Prep Time: 10 mins | Cook Time: 25-30 mins | Serves 4<\/strong><\/p>\n<p><strong>Ingredients<\/strong><br \/>\n\u2022\t3 \u2153 cups (800ml) filtered water<br \/>\n\u2022\t\u2153 cup (80ml) split mung beans<br \/>\n\u2022\t\u2153 cup (80ml) red lentils<br \/>\n\u2022\t\u2153 cup (80ml) basmati rice<br \/>\n\u2022\t1 teaspoon turmeric powder<br \/>\n\u2022\t12 curry leaves<br \/>\n\u2022\t1 teaspoon crushed fresh ginger<br \/>\n\u2022\t1 teaspoon cumin seeds<br \/>\n\u2022\t1 teaspoon coriander seeds<br \/>\n\u2022\t5 peppercorns<br \/>\n\u2022\t1 carrot, chopped<br \/>\n\u2022\t1 medium zucchini, chopped<br \/>\n\u2022\t2 kale leaves, thinly sliced<br \/>\n\u2022\t1 teaspoon ground rock salt or pink Himalayan salt<br \/>\n\u2022\t1 tablespoon ghee<br \/>\n\u2022\t1 teaspoon cumin seeds<br \/>\n\u2022\t\u2153 cup (80ml) chopped fresh cilantro<br \/>\n\u2022\tJuice or 1 lemon and 1 lime<\/p>\n<p><strong>Directions<\/strong><br \/>\n1.\tBring water to a boil in a medium pot.<br \/>\n2.\tAdd mung beans, lentils, rice, turmeric, curry leaves, and fresh ginger.<br \/>\n3.\tOnce it is boiling again, reduce heat and simmer.<br \/>\n4.\tIn the meantime, grind cumin seeds, coriander seeds, and pepper corns in a coffee grinder. Add 1 teaspoon of the spice blend into the kitchari.<br \/>\n5.\tAdd carrots, zucchini, kale, and salt and cook uncovered for 15 to 20 minutes, until the lentils are tender and the mixture resembles a thick porridge.<br \/>\n6.\tStir occasionally and add more water if it is getting too dry.<br \/>\n7.\tHeat ghee in a skillet, add 1 teaspoon cumin seeds and fry for 30 seconds.<br \/>\n8.\tAdd the rest of the ground spice blend from step 4, then immediately add a little bit of the kitchari to prevent burning and stir well.<br \/>\n9.\tAdd the spice fry to the kitchari and stir some more.<br \/>\n10.\tGarnish with fresh lemon and lime juice and chopped cilantro.<br \/>\nFor a spicier variation, add chopped fresh green chili and\/or fresh chopped ginger.<br \/>\nEnjoy!<\/p>\n<p>By Chef Lakshmi Harilela<br \/>\nGreen Queen was born and raised in Hong Kong to an Indian mother and French-Italian father.
