And the various elements can also be used to make a number of different dishes when combined in different ways. So healthy without the gluten, this is a perfect hearty lunch or healthy dinner. Enjoy!<\/p>\n<p><strong>Ingredients for the Pasta<\/strong><br \/>\n1 whole zucchini, halved and thinly sliced with a mandolin<br \/>\nExtra Virgin Olive Oil<br \/>\nSea salt and pepper, to taste<\/p>\n<p><strong>Method<\/strong><br \/>\nMix the pasta in the olive oil, salt and pepper. Set aside to marinade.<\/p>\n<p><strong>Ingredients for the Cashew Ricotta Filling<\/strong><br \/>\n1 \u00bd cups cashews, soaked<br \/>\n2 tbsp lemon juice<br \/>\n2 tbsp water<br \/>\n\u00bd tbsp lemon zest<br \/>\n2 tbsp nutritional yeast<br \/>\n\u00bd tsp sea salt<br \/>\n\u00bd green onion, minced<br \/>\n1 tbsp fresh parsley<\/p>\n<p><strong>Method<\/strong><br \/>\nIn a food processor, blend the cashews, lemon juice and zest, nutritional yeast and salt until smooth.<br \/>\nTransfer the mixture into a bowl and fold in the minced onions and parsley.<br \/>\nTaste for seasoning and adjust as needed.<br \/>\nNote: The filling should have the consistency of ricotta cheese.<\/p>\n<p><strong>Ingredients for the Basil-Pistachio Pesto<\/strong><br \/>\n1 cup fresh basil leaves<br \/>\n\u00bc cup spinach leaves<br \/>\n\u00bc cup pistachios<br \/>\n2 tbsp Extra Virgin Olive Oil<br \/>\n1\/8 tsp sea salt<br \/>\n\u00bd tsp lemon juice<br \/>\nPinch freshly ground black pepper<\/p>\n<p><strong>Method<\/strong><br \/>\nPlace the pesto ingredients in a food processor and blend until well combined but still slightly chunky. Maintaining the texture is important.<\/p>\n<p><strong>Ingredients for the Red Pepper Marinara<\/strong><br \/>\n\u00bd cup sundried tomatoes, soaked for 1 hour<br \/>\n1 medium tomato, de-seeded and roughly chopped<br \/>\n\u00bd shallot, chopped<br \/>\n1 tsp lemon juice<br \/>\n2 tsp olive oil<br \/>\n\u00bc tsp sea salt<br \/>\n\u00bc tsp red chili flakes<br \/>\n\u00bd red bell pepper, seeded and chopped<\/p>\n<p><strong>Method<\/strong><br \/>\nSqueeze out the excess water from the sundried tomatoes.<br \/>\nProcess everything in your food processor. Leave chunky.<\/p>\n<p><strong>Ingredients for the Herb Oil (optional)<\/strong><br \/>\n1 cup olive oil<br \/>\n\u00bc cup spinach leaves<br \/>\n\u00bc cup fresh basil leaves (or herb of choice)<br \/>\nPinch sea salt<\/p>\n<p><strong>Method<\/strong><br \/>\nBlend well then strain, keeping the solids.<br \/>\nNote: You must store this in the refrigerator \u2013 it will keep for 3 \u2013 4 days.<\/p>\n<p><strong>ASSEMBLY<\/strong><br \/>\nLayer two slices of zucchini pasta on the bottom.<br \/>\nSpread red pepper marinara on top of the pasta.<br \/>\nTop with another two pieces of zucchini pasta.<br \/>\nAdd cashew ricotta and basil-pistachio pesto.<br \/>\nTop with slices of fresh tomato.<br \/>\nCover with two more slices of zucchini pasta.<br \/>\nSpread another layer of red pepper marinara on top.<br \/>\nFinally top with dollops of cashew ricotta, basil-pistachio pesto, two slices of tomato and microgreens (if desired). Garnish the plate with herb oil.<\/p>\n<p>NOTE: Assembled rawsagne will last for two to three days in the fridge.<\/p>\n<p><em>This recipe comes from Calista Goh, founder of Anything But Salads, one of Sheung Wan\u2019s go-to stores for superfood chocolate, bulletproof coffee and granola to go.
