Make a generous batch and don\u2019t worry if you don\u2019t finish it all at the first sitting as it gains even more flavor when you leave it in the fridge overnight.<\/p>\n<p><strong>Ingredients<\/strong><br \/>\nFor the salad<br \/>\n1 bag of carrots \u2013 most come in 1lb sizes<br \/>\n\u00bd cup golden raisins \u2013 you can try adding Craisins, slivered almonds, golden berries, shredded red cabbage or spring onions into the mix too<\/p>\n<p>For the dressing<br \/>\n1\/3 cup apple cider vinegar<br \/>\nPinch of salt<br \/>\nPinch of black pepper<br \/>\n1 tsp agave syrup or honey<br \/>\n\u00bd c extra virgin olive oil<br \/>\n2 tbsps chopped cilantro<br \/>\n2 tbsps grated ginger<\/p>\n<p><strong>Method<\/strong><br \/>\nShred the carrots into a medium sized bowl.<br \/>\nAdd the golden raisins and any of the other ingredients you\u2019d like to include.<br \/>\nCombine all the dressing ingredients, whisking together with each addition. Pour the dressing over the salad and serve.<\/p>\n<p><strong>About Megan Farrugia<\/strong><br \/>\nA long-term weekend warrior, Megan is a triathlete as well as a skier and took up Pilates when stress in her neck and shoulders started giving her headaches. Not only did it rid her of the pain, it also increased her athletic performance and frame of mind.
