Pomegranate Kitchen, a catering and events company with two venues in Wong Chuk Hang (and a weekday lunch service!) say that this is one of their big hits this winter.<\/p>\n<p>A Middle Eastern inspired dish utilizing fresh and flavoursome ingredients, \u201cit is definitely a favourite of ours over here\u201d, says a Pomegranate spokeswoman (check out <a href=\"http:\/\/www.pomegranate.com.hk\">www.pomegranate.com.hk<\/a>)<\/p>\n<p><strong><u><img loading=\"lazy\" decoding=\"async\" class=\"alignnone wp-image-20476 \" src=\"https:\/\/flexhk.com\/wp-content\/uploads\/2024\/03\/P_14Jul15_0359.jpeg\" alt=\"Pomegranate\" width=\"636\" height=\"424\" \/><\/u><\/strong><\/p>\n<p><strong><u>Charred Eggplant and Feta Soup with Corriander, Chili and Cumin Oil<\/u><\/strong><\/p>\n<p>Serves 8<\/p>\n<ul>\n<li>8 eggplants, chargrilled\/intensely smoked, then remove the flesh and discard the skin.<\/li>\n<li>2 large brown onions, chopped<\/li>\n<li>5-6 garlic cloves<\/li>\n<li>\u00bc teaspoon of chili powder<\/li>\n<li>\u00bc teaspoon of cumin<\/li>\n<li>1.2L Chicken Stock<\/li>\n<\/ul>\n<p>&nbsp;<\/p>\n<p><strong><u>For Tarka\/ Part of your garnish<\/u><\/strong><\/p>\n<ul>\n<li>1 teaspoon cumin seeds<\/li>\n<li>10g coriander, chopped<\/li>\n<li>Pinch red chili<\/li>\n<li>3 table spoons extra virgin olive oil<\/li>\n<\/ul>\n<p>&nbsp;<\/p>\n<p><strong><u>For Garnish<\/u><\/strong><\/p>\n<ul>\n<li>100g feta, crumbled<\/li>\n<li>8 sprigs of coriander<\/li>\n<\/ul>\n<p>&nbsp;<\/p>\n<p><strong><u>Method<\/u><\/strong><\/p>\n<ol>\n<li>Saute the onion, garlic until translucent. Then add smoked eggplant, chili and chicken stock. Cook for 20-25 minutes. Blend until smooth and creamy.<\/li>\n<li>In a pan, heat the extra virgin olive oil.
