Not only is this recipe perfect for summertime, it provides loads of nutritional benefits, too. Black beans are rich in protein and low in fat; what it <\/span><i><span style=\"font-weight: 400;\">does<\/span><\/i><span style=\"font-weight: 400;\"> contain are mostly polyunsaturated fats which are essential for the body. We also incorporate cabbage, which <\/span><span style=\"font-weight: 400;\">contains a high level of polyphenols, <\/span><span style=\"font-weight: 400;\">provides antioxidant benefits\u2026 not to mention an exceptional source of Vitamin K.<\/span><\/p>\n<p><span style=\"font-weight: 400;\">Let\u2019s get cooking!\u00a0<\/span><\/p>\n<p>&nbsp;<\/p>\n<p><b>Ingredients:<\/b><\/p>\n<ul>\n<li style=\"font-weight: 400;\"><span style=\"font-weight: 400;\">180-200g per pc Chicken Breast\/Thigh<\/span><\/li>\n<li style=\"font-weight: 400;\"><span style=\"font-weight: 400;\">1\/8 cup Black Beans<\/span><\/li>\n<li style=\"font-weight: 400;\"><span style=\"font-weight: 400;\">1\/8 cup Corn<\/span><\/li>\n<li style=\"font-weight: 400;\"><span style=\"font-weight: 400;\">2 chopped Tomatoes<\/span><\/li>\n<li style=\"font-weight: 400;\"><span style=\"font-weight: 400;\">1 cup Green &amp; Red Cabbages<\/span><\/li>\n<li style=\"font-weight: 400;\"><span style=\"font-weight: 400;\">1 1\/2 tbsp Garlic<\/span><\/li>\n<li style=\"font-weight: 400;\"><span style=\"font-weight: 400;\">1\/2 cup Carrots<\/span><\/li>\n<li style=\"font-weight: 400;\"><span style=\"font-weight: 400;\">1 tsp Cajun Seasoning<\/span><\/li>\n<li style=\"font-weight: 400;\"><span style=\"font-weight: 400;\">1 Red Onion<\/span><\/li>\n<li style=\"font-weight: 400;\"><span style=\"font-weight: 400;\">3 tbsp Coriander (have extra)<\/span><\/li>\n<li style=\"font-weight: 400;\"><span style=\"font-weight: 400;\">2 tbsp Honey<\/span><\/li>\n<li style=\"font-weight: 400;\"><span style=\"font-weight: 400;\">1 tbsp Chipotle<\/span><\/li>\n<li style=\"font-weight: 400;\"><span style=\"font-weight: 400;\">4 tbsp Olive oil (add more accordingly)<\/span><\/li>\n<li style=\"font-weight: 400;\"><span style=\"font-weight: 400;\">4 tbsp Lime or Lemon Juice (have extra)<\/span><\/li>\n<li style=\"font-weight: 400;\"><span style=\"font-weight: 400;\">1 tsp Salt &amp; Pepper (add more accordingly)<\/span><\/li>\n<li style=\"font-weight: 400;\"><span style=\"font-weight: 400;\">1 cup Quinoa<\/span><\/li>\n<li style=\"font-weight: 400;\"><span style=\"font-weight: 400;\">1 ripe Avocado\u00a0<\/span><\/li>\n<\/ul>\n<p>&nbsp;<\/p>\n<p><b>Method:<\/b><\/p>\n<ol>\n<li style=\"font-weight: 400;\"><span style=\"font-weight: 400;\">Mix 1\/2 tsp of salt, Cajun seasoning, 2 tbsp of olive oil, and 1\/2 tbsp of garlic; mix well and marinate chicken for 20 minutes.<\/span><\/li>\n<li style=\"font-weight: 400;\"><span style=\"font-weight: 400;\">Cook quinoa (in a rice cooker or a pot).<\/span><\/li>\n<li style=\"font-weight: 400;\"><span style=\"font-weight: 400;\">Prepare tomato salsa (Pica De Gallo) with chopped tomatoes, 1\/2 chopped red onion, 3 tbsp coriander slice, chipotle, and 2 tbsp of lime juice. Season with salt and pepper.<\/span><\/li>\n<li style=\"font-weight: 400;\"><span style=\"font-weight: 400;\">Prepare the cabbage salad by shredding the red and green cabbages, 1\/2 red onion, and carrots.<\/span><\/li>\n<li style=\"font-weight: 400;\"><span style=\"font-weight: 400;\">Toss avocado cubes in lime\/lemon juice and mix with chunky coriander for a side<\/span><\/li>\n<li style=\"font-weight: 400;\"><span style=\"font-weight: 400;\">To the slaw, add 2 tbsp olive oil, 3 tbsp lime juice, honey and mix well.<\/span><\/li>\n<li style=\"font-weight: 400;\"><span style=\"font-weight: 400;\">Cook the chicken in olive oil in a pan.<\/span><\/li>\n<li style=\"font-weight: 400;\"><span style=\"font-weight: 400;\">In the same pan, saute 1 tbsp garlic with olive oil, and add quinoa. Turn off the heat and add corn and beans.
